I use OpenBoard most of the time and it’s good if you are more privacy focused.

No, it’s not possible by now

Totally agree. You can customize it a load. It has a ton of functions even local spellchecking once setup
I use AnySoft Keyboard. It is very configurable and has a lot of language options.
I’m still waiting for someone to fork Minuum Keyboard
